I haven't posted any mutton dishes yet.Mainly since I am keeping away from all kinds of red meat for long now.But if I can speak from heart,I am a total carnivore by likes.I love all mutton/beef dishes of Kerala.I mean, the original ones using coconut oil and shallots.Sorry to disclose but,I haven't had any for long.Whatever you may say,if you have tasted the original Kerala style Beef fry or mutton olathu,no chance for you to keep away.Such a delight to have,such an explosion of delicacy to your senses.Believe me.
Here is one such mutton curry from Kerala villages.This is a thick spicy curry being neutralized by coconut milk.Typical Kerala..Try and see.
- 1/2 Kg Mutton (along with bones) chopped
- 3 medium sized onions sliced
- 1 big tomato chopped finely
- 2 medium sized potatoes chopped the size of mutton
- 1 cup of thick coconut milk
- 1 tbsp Ginger-Garlic paste (preferably home made)
- 2 Green chillies cut lengthwise or according to your tolerence level
- 20 gms of Whole Cinnamon (karuvappatta)
- 15 gms of Cloves
- 2 Green Cardamom
- 2 tsp Aniseed (you may use powder too)
- 3/4 tsp turmeric powder
- 3 tsp chilly powder or according to your tolerence level
- 4 tsp coriander powder
- Curry leaves,oil and salt as required
- Pinch of Garam masala powder to Garnish
- Wash the mutton pieces thoroughly under running water rubbing some maida/all purpose flour.Place it in a drainer and go on preparing other ingredients
- Heat oil in a heavy bottomed vessel and add whole spices (cinnamon,cloves,cardamom and aniseed) and allow it to splutter..be careful not to burn them.
- Now add chopped onion and saute well for 2mts.
- Add Ginge Garlic paste and saute well
- Put the slit green chillies and few curry leaves and saute them thoroughly till Onions turn light brown
- Add mix chopped tomatoes and mix well till it becomes soft
- Now start adding powders and take care not to burn them.Saute well till the raw smell disappear
- Mix in the chopped potatoes and let the masala coat well
- Add Mutton pieces,salt and mix,saute well for at least 5 mts
- Shift the entire preparation to a Pressure cooker (you may add little water washing the vessel) and cook it in a medium flame for 15 mts.
- Switch off the stove and allow cooker to cool
- Now open the cooker to see a well coated brown color masala coated mutton with divine aroma
- Check the seasoning and add salt if its necessary
- Add the thick coconut milk and allow it to boil
- Mix well till it turns to a thick masala and switch off
- Garnish with few curry leaves and Garam Masala.Keep it closed and serve hot whenever necessary
Serve hot with Puttu/Appam/Rice
