My daughter loves orange and orange flavored bakes.I often bake orange muffins for her.This one which is adapted from Tarla Dalal is even better with it's tutti-frutti extravaganza..Just try and see the magic of an orange-flavored egg-less loaf !
Ingredients
1 1/4 cup all purpose flour / maida
1.5 tsp baking powder
1/2 tsp soda bi-carb
3/4 cup condensed milk
3 tbsp orange juice
4 tbsp melted butter
2 tbsp orange marmalade
1 tsp vanilla essence
handful of tutti-frutti mixed with 1 tsp plain flour
handful of tutti-frutti to garnish
cooking spray or butter to grease the loaf-tin
Method
Pre-heat the oven to 180 degree. Prepare a 200 mm.(8") * 75mm.(3") loaf tin.Sift the flour,baking powder and soda bi-carb into a bowl and mix till combined.In another bowl,bring together condensed milk,orange juice,melted butter,orange marmalade and vanilla essence.Beat well and keep side.Don't overbeat.Now slowly add the flour mixture to this and mix gently with a wooden spatula.Finally add the flour-coated tutti-frutti and combine slowly to the mixture.The mixture should be of dropping consistency.If you feel it is not,you may add orange juice.Pour the batter into the greased tin and sprinkle the remaining tutti-frutti evenly over it.Bake in 180 degree for 40 minutes or till a cake tester comes out clean.Remove and allow to cool.Cut into equal slices.










Cake looks so spongy and perfectly baked,its been in my to do list long time,will try it soon....
